How do I know what x/y to use?

PDF points: 0,0 is the bottom-left corner; 1 inch = 72 points; an A4 page is 595 × 842 points. Try x=50, y=50 to land near the bottom-left margin.

Will the image be on top or behind text?

On top of the existing page content. If you need a behind-the-scenes watermark, use Add Watermark instead.

Can I add multiple images at once?

Not in this v1 — run the tool once per image. Multi-image stamping is on the roadmap.
