Annotations are dropped from the page /Annots arrays; form fields are flattened to static content first (so filled-in values survive), then the AcroForm entry is removed; JavaScript actions are wiped from the catalog OpenAction + /AA and from every page's /AA. Pair with Compress PDF afterwards if you want to also drop the unreferenced JS object bytes from the file.
