Gluten-free flour blends mimic AP wheat flour function. Standard "GF AP" ratio: 70% rice flour (structure), 20% starch (potato or tapioca, lightness), 10% sorghum or millet (flavor + protein). Add xanthan gum (~ยฝ tsp per 100g flour for cookies/cake; 1 tsp per 100g for bread) for gluten-like elasticity. Pre-made blends (Bob's Red Mill 1-to-1, King Arthur GF AP) save mixing time.
