The binarisation step pushes near-white pixels (the haze, the meeting-room glare) to pure white while darkening the marker strokes so they stand out. Whiteboard photos are usually low-contrast and dominated by glare. Binarisation pushes the background toward pure white and darkens the strokes — the result is sharper and more readable than the raw photo. Switch it off if you want the original.
