About this calculator
UK gas ovens are still calibrated in Gas Marks (1 to 9), inherited from early 20th-century gas-stove makers. Mark 1 = 275 °F; each mark adds ~25 °F. Common targets: Mark 4 = 350 °F (baking), Mark 5 = 375 °F (cookies), Mark 6 = 400 °F (roast), Mark 7 = 425 °F (pizza), Mark 8 = 450 °F (high roast). The "Slow oven" / quarter mark settings (¼, ½, S) range 225-265 °F, used for rendering, low-and-slow braise, drying.

Why Gas Marks at all?+
Pre-thermostat gas ovens used a mechanical valve marked 1-9. The scale outlived the technology. Modern UK gas ovens print both marks and °C.
What about quarter marks?+
Mark ¼ = 225 °F (S/slow). Mark ½ = 250 °F. Used for slow cooking and rendering fat.
Mark 9 highest?+
Yes — Mark 9 = 475 °F = 245 °C. Some ovens go to Mark 10 (500 °F) or have a "broil" beyond.
Does Mark = same in fan ovens?+
No — fan ovens print °C only. Subtract 25 °F (~14 °C) when converting between fan and conventional.
EU recipes use Gas Mark?+
Mostly UK + Ireland. Continental Europe uses °C. Australia/NZ also use °C.
